Chicken, Bacon, Veggie Wraps

I put my “I’m Meriah and I don’t measure” spin on this recipe, which I can no longer find on everydaypaleo.com.  I should write her a thanks for finding a way for me to eat broccoli again.  The sauce in this recipe makes more than needed for one meal.  I save it and use it for the week on all sorts of veggies!

Chicken, Bacon, Veggie Wraps
2 Chicken Breasts
4-6 Slices of bacon
2-4 Carrots cut in half length wise and quartered
1/3 Cup chicken broth

The Sauce

1 Tsp dry mustard
1 Tsp apple cider vinegar
1 Egg
1/2 Tsp Paprika
11/2-2Cup Olive Oil
1/4-1/3 broth and drippings from chicken

Heat the oven to 425.  In pan start cooking you bacon strips until slightly browned but still flimsy.  Remove from heat and set aside.  Split breasts in half  width wise.  Cut again in needed to to strips.  Take a slice of bacon place chicken on top, followed by carrot quarter.  Roll/fold and secure with tooth pick.  Place in deep baking pan.  When you’ve rolled ‘em all up add chicken broth, cover pan with foil, and place in oven.  Cook until chicken is done, about 20-30min.  When done save about 1/4-1/3 cup of the leftover juice.  In blender mix broth, mustard, vinegar, egg in food processor.  While the food processor is running start adding olive oil until it becomes creamy, and slightly more viscous than mayo. Load your plate with your chicken and favorite steamed veggie.  Just before you are ready to devour spoon on sauce and quickly eat!

Tips, Ticks and Fun Useless Info:  Instead of carrots zucchini is yummy as well.  I like my sauce tangy so I may slip a little more vinegar in there.  If you like it saltier add more broth.  Browning the bacon before hand keeps it crisp instead of floppy and soggy.  I did not use paprika in the picture, but its good with or without it.  I ate too much broccoli back in my Zone-ing days, so its hard for me to choke down these days.  However this sauce allows me to eat my veggies with more delight than just steamed.  If you put sauce on right away, it will melt too much and become soupy and run off your veggies and chicken. :( Boo.

    Hmm. . .can we see some stuff that doesn’t include chicken? :)

      Cindy, ask you ye shall receive! I have been a bit on a chicken kick lately, huh. I just got a bunch of beef from my last trip home so look for more beef to come. I believe next week will be sides like salads, fruits and veggies, but maybe not. We’ll see how domesticated I am this week and how much cooking I get done!

    Sounds good!!! I happened to read through all the recipes and noticed that, well. . .all of them contain chicken. As much as I love it, my daughter is intolerant. So mix it up! I have some venison we can give you. ;)
